I like the pumpkin in every way, both in fresh and salty. I normally use a lot of my dishes to accompany vegetables and some meats. In this case, I cooked one in a kind of stew. It is a dish Light and digestive system. I recommend it.
Ingredients (4 people)
- 1 Kilo of Pumpkin
- peeled and cleaned 3 cloves garlic ½ teaspoon
- good paprika 2 slices of fresh bread previous
- ½ liter vegetable broth or chicken
- A Pinch of Cumin
- Extra Virgin Olive Oil Salt
Preparation: Put
heat the oil and fry in it the whole garlic trying not to burn. Remove them and fry the bread in the same oil. Pass both a mortar and mash with a little of the broth until it is like a paste. Book.
Remove oil from heat to cool slightly, pour the paprika and stir. Dumping
pumpkin and replace the fire. Add broth, cumin and crushed that we had booked and cook until squash is tender.
Test and salt if necessary.
