Kebuli Nasi (Rice Fried meat) is a recipe typical cuisine of the island of Java (Indonesia.) is a spiced rice dish is served with fried meat (lamb or chicken) and onion rings or fried onions and cucumbers. As I was missing some of the spices that I could not find here, I adapted the recipe with which I provided and changed some other similar.
I think the change that I have not seen because it is minimal, and anyway, is a recipe for our palate totally oriental.

Ingredients:
  • 1 Kilo and a half of chopped chicken
  • 450 grs. Rice Long-grain crushed 4 shallots
  • (I added an onion Midianite)
  • 3 cloves garlic, minced 2 teaspoons
  • ground coriander ½ teaspoon ground cumin 1 pinch
  • lemongrass powder (I I put the zest of one lemon)
  • 1 teaspoon ground cinnamon or cinnamon stick 1
  • Pinch grated nutmeg 1 pinch
  • ground ginger 1 pinch of Laos (do not put it)
  • 2 Whole cloves Sal
For the garnish:
  • onion rings or onion slices
  • cucumber (I added pepper) Oil for frying

Prepared
Put the rice to soak for about an hour.

In a saucepan place the chicken along with all the spices and salt. Cover with cold water and place on high heat until it reaches a boil. Reduce heat and simmer 40 minutes or until chicken is tender.


Remove chicken and strain the broth, reserving 4 cups and half of it.

In a pan put some oil and saute the rice for five minutes, stirring to prevent sticking and to brown.

Add broth cups we had booked and cook until it runs dry.

Pass to a container where it can be steamed for ten minutes, covered.

While the rice is cooked to heat the oil and fry the chicken until it is golden. Drain on absorbent paper.

Place hot rice in a bowl and put the chicken on top with onion rings and fried peppers.
